Fudgy Gluten-Free Vegan Brownies

Don’t let the name scare you — this are TASTY.

What you need:

7 ounces semi-sweet chocolate
6 Tablespoons safflower oil
3 Tablespoons ground flax seeds
1 cup strong brewed coffee
3/4 cup unrefined coconut sugar
1 cup whole grain gluten-free flour
1/2 cup oat flour
1/4 cup cocoa powder
2 Tablespoons tapioca flour
3/4 teaspoon kosher salt

Preheat oven to 350 degrees F and line an 8”x8” pan with parchment paper.

Add the chocolate, oil and flax to a small sauce pan and put on low heat, continually stirring until chocolate has just melted. Add coconut sugar and stir until dissolved. Stir in coffee and remove from heat.

Add the remaining ingredients and stir until completely incorporated. Pour into pan and bake for 20 minutes. Wait about 15 minutes before cutting into the brownies. They will be gooey but that’s how I like ‘em!
