Miso Sweet Potatoes

Sweet potatoes are one of the most nutrient-dense vegetables in the world. They are also sweet and delicious. This recipe works great ahead of time and also saves well for leftovers (two things I love as a busy mom). Enjoy these as a main dish or as a side with pretty much everything.

What you need:

4 sweet potatoes
2 Tablespoons butter
2 Tablespoons white miso paste
1 Tablespoon real maple syrup
2 Tablespoons extra virgin olive oil
3 scallions, chopped
sprinkle of black sesame seeds

Preheat oven to 400 degrees.

Slice sweet potatoes lengthwise and then in half. Spread a thin amount of butter on flesh side and put on parchment lined baking sheet (skin side up). Roast for 40 minutes until fork tender.

Miso Glaze:

Mix miso, maple syrup and olive oil in bowl until smooth. Drizzle on cooked sweet potatoes and finish with scallion and sesame seeds.
