Miso Sweet Potatoes
Sweet potatoes are one of the most nutrient-dense vegetables in the world. They are also sweet and delicious. This recipe works great ahead of time and also saves well for leftovers (two things I love as a busy mom). Enjoy these as a main dish or as a side with pretty much everything.
What you need:
4 sweet potatoes
2 Tablespoons butter
2 Tablespoons white miso paste
1 Tablespoon real maple syrup
2 Tablespoons extra virgin olive oil
3 scallions, chopped
sprinkle of black sesame seeds
Preheat oven to 400 degrees.
After washing sweet potatoes and peeling off any bruised spots (I try and keep most of the skin on). Slice sweet potatoes lengthwise. Spread a thin amount of butter on flesh side and put on parchment lined baking sheet (skin side up). Roast for 35-40 minutes until fork tender.
Miso Glaze:
Mix miso paste, maple syrup and extra virgin olive oil in bowl until smooth. Spoon on cooked sweet potatoes and finish with scallion and sesame seeds.
