The Best Banana Bread

Tis the season for warm, gooey, perfect banana bread. This recipe does have a lot of ingredients, but trust me, it’s SO good and now my go-to recipe when I have three ripe bananas in the kitchen!

Preheat oven to 350. Line a loaf pan with parchment paper.

What you need:
3 ripe bananas, smashed with a fork
2 eggs
1/2 Cup sugar
1/2 real maple syrup
1/2 Cup whole greek yogurt
1/2 Cup coconut milk
1/2 Cup sunflower oil
Juice of one lime
2 Cup all-purpose flour
1 tsp vanilla
1 tsp cinnamon
1/2 tsp baking soda
1/2 tsp kosher salt

Ideas for topping the loaf before it goes into the oven: Sliced almonds, dried orange slices, a drizzle of nutella or chocolate tahini, chocolate chips, dried blueberries.


Mix everything together in a large bowl. Don’t over-mix it with an electric mixer, just use a wooden spoon. Pour into lined loaf pan and bake in oven for about 40 minutes or until a toothpick comes out clean.
