Apricot Vinaigrette

Most of the time I’m in mood for salty, vinegary, garlicky dressing on greens but sometimes I want something sweet. This vinaigrette is perfect for a simple salad — my 4-year-old loves it, too.

What you need:

1/4 C apricot preserves (I love Bonne Maman)
1/4 C sunflower oil (grapeseed oil works well, too)
1/2 tsp kosher salt
1 Tablespoons apple cider vinegar
1 clove garlic
Juice of 1 medium orange

Blend everything together in a food processor or blender. This will last 10 days in the refrigerator. You can always add a tablespoon of water and shake it up if it thickens when cold.
